How to make ”Natto”

"Natto" is the one of traditional Japanese fermented SUPER FOOD!

"Natto" is incredibly nutritious and linked to various health benefits.



Natto is rich in protein, probiotics, several vitamins and minerals, all of which contribute to a healthy immune system.


Natto contains fewer antinutrients and more probiotics than non-fermented soybeans.


Natto fermentation produces nattokinase, a type of enzyme that helps dissolve blood clots.


Natto is one of the rare plant sources of vitamin K2.Vitamin K2 plays an essential role in bone health


Natto is rich in polyamines. Polyamines are organic compounds essential for cell growth.It links with anti-aging effects!


RECIPE

ingredients

  • 250g soy beans or any kind of beans you want to use

  • 1 stem of mint


  1. Soak benas in the enough water overnight.

  2. Drain it and steam until soft.(I usually steam beans 20min with pressure cooker)

  3. Drain beans and place it in the cleaned container.(Clean container with boiled water or alcohol before use it)

  4. Boil mint in few second to kill bacteria except Natto bacteria.(Nato bacteria will not die even 100c degree.)

  5. Put mint on top of beans.Cover with the cloth or paper towel and labverbund.Don't cover with lid.

  6. Keep warm it around 45 c degree in 24hours.(Use yogurt machine or insulation box with bottle filled with hot water.You might need change the hot water sometimes to keep it warm)

  7. After 24 hours ,keep it in fridge 1or 2 days for ageing.
