black salt: Black salt is the key for eggy flavour of vegan dishes.It's also rich in minerals and has used in Ayurveda becouse of numerous medical properties.I use it for "tofu omelet " and "carbonara".
Miso;Miso is beans that cultured with grains aged for minimum 6months. Unpasteurised miso has living enzymes and beneficial bacterias.It is great addition for flavouring.It can add cheesy-ness and meaty-ness for vegan dishes .
We make our own "Miso"form scratch.I prepared big batch of miso for next season when season is ending.
Oil

coconut oil:The most heat resistible oil and best for cooking.Coconut oil contains healthy medium chain saturated fat. MCT's ( medium chain triglycerides). More than half of MCT's in coconut oil is lauric acid. Which promotes a strong immune system. It is a powerful anti- viral/-fungal/ - microbial and helps increase metabolism and transforms into quick energy easily, it also helps lower cholesterol.

jaggery (unrefined carne sugar);Cane sugar juice concentrated and molasses is not removed.Brownish yellow coloured soiled jaggery block is a less processed version of brown sugar, so has more nutrients.It contains lots of antioxidants, zinc, selenium, potassium, magnesium, iron and more vital nutrients, making it much more beneficial than white sugar.

coconut sugar;They are made from nectar from the coconut palm tree flower.They taste a bit caramel-like rich flavour. They are rated low glycemic index of 35 as of it s high contents of insulin. They are highly nutritious with mineral, and amino acids.It s useful to make the block into liquid for many recipes.

honey;Honey is highly nutritious and amazing medical and healing properties . It supplies the ideal prolong energy and stamina and boosts the immune system.It contains enzymes, amino acids, vitamins and minerals, phytonutrients , has anti-viral , anti-bacterial, anti-fungal, antioxidant property.Majority of the commercial honey is pasteurised and heat-treated. Although honey is not considered to be vegan product as been involved in the productions, I use it for my recipes as of its beneficial.So always check to the vegan guests if they can eat honey or no in the beginning of the retreat.

dates;Date are great whole sweeter.It is a good sauce of iron, copper, potassium, magnesium, and dietary fibre.

stevia:Stevia is the natural herb originally from Paraguay.It is not including any glucose and fructose.It can not increase blood sugar level and 0 calorie.It's not only the gilt-free sweeter but also having amazing healing power! I prefer to use unrefined green powder one.You can get it "Orchard store" in Anjuna.
