Kitchari is the Indian porridge that traditional cleansing food of Ayurveda. It is a combination beans and rice with plenty of spices.
The combination of rice and beans provides all essential amino that our bodies are not able to make on their own and needed to form a complete protein.
Kithchari is easy to digest and eating just kitchari for several days offers the digestive system rest.
Spices encourage healthy digestion too.
Kitchari can removes toxins from the body and it is enough to fuel you as you accomplish your day-to-day responsibilities unlike fasting cleanse.
Azuki beans and Brawn rice Beet Kitchari
recipe
250g brawn rice ( or white rice)
125g azuki beans (or mung beans)
90g beet root (or carrot)
15g ginger
1 TBSP coconut oil
2 tsp cumin seed
1/2 tsp hing
10-15 curry leaf
1/2tsp turmeric
4-5 cup water
salt for taste
2 TBSP chopped coriander leaves for ganesh
(1)Soak brawn rice and azuki bean overnight.
(2)Cut beet root in cube and chop ginger.
(3) Heat the coconut oil in the pressure cooker add cumin seed, curry leaf.
(4)Add hing then add ginger and carrot and sauté it.
(5)Add turmeric, then add water, brawn rice, azuki bean and salt.Close the rid.
(6)Cook with high flame until get pressure.Once pod gets the pressure, make flame small and cook with 20min.
(7)Close the flame and leave it until pressure gone nuturally.
(8)Open lid and add coriander leaf.
Optional spices for warming body and balanced Kapha dosha
1 tsp coriander seed
1 tsp mustard seed
8 pices clove
8 pices cardamon
11 black pepper
2 cm cinnamon stick
2 TBSP shred coconut
