This mini pumpkin pudding using ”Amazaka” that is fermented rice taste sweets.
You can make your own Amazake from rice and "Koji"(rice yeast) or you can just replace with less amount of another required sweeter as your choice.
"Amazake" is living food
Amazake is a fermented food that is made with rice and starter called koji. it transforms cooked rice into intensely sweet paste.
It contains no gluten, dairy or any added sweetener.

It’s called the “IV drip to drink”in Japan.This fermented rice drink is packed with nutrients, including vitamins, minerals, enzymes and all essential amino acid , – which are almost the same components as an IV drip
Koji produces a lot of B vitamins while it fermenting .B vitamin group helps carbohydrate and fat metabolism, producing energy, improved skin.
Enzymes produce "Umami" flavour and make it digestible.
It contain oligosaccharide as a one type of sugar retardation absorption sugar and peptides that koji break up protein from rice bring down the blood pressure.

recipe
120g pumpkin paste net weight
300ml homemade brawn rice "Amazake"
1cup nut milk or coconut milk
1/2tsp powder agar agar
1 tsp arrow root starch
1/2tsp vanilla extract
Cut upper side of pumpkin for the lid and take out the seeds.
Steam it.
Scoop out the 120g flesh of a pumpkin.
Mix with all ingredients except vanilla extract with the blender.
Cook it 2~3 min with small pot.You must stair while cooking
Off the heat and add the vanilla extract.
Pour it in the pumpkin bowl and keep it into fridge while make it chill and set.
