Originally tempeh is made from soy beans but you can use any kind of beans instead of soy beans.black beans ,mung beans...etc.Peanuts is also works.
Recipe
200g beans
1/4 cup vinegar
600ml water
1tsp tempeh last powder
All equipments bowl, musher and spoon needs to clean with boiled water or alcohol before use it to prevent to get the bad bacteria.
(1)Soak beans with vinegar and water overnight
(2)Strain water and set beans in pressure cooker and pour 600ml water.
Cook with pressure 5min in low frame.
(3)Make pressure cooker cold with the running tub water to take out pressure immediately.(Don't cook beans soft.If it become too soft easy to get Natto bacteria)
(4)Strain the water. Put it in the bowl and crash beans roughly by musher to take out skin.Let beans cool around 30℃.
(5)Mix with the tempe last powder and put it in container.
Keep it warm around 30℃ 1or 2 nights.
(I use the thermo box with the bottle filled hot water for keep tempeh warm)
